Rolling subs. Six to ten players both work fine.

One payment per team, shown up front. The captain doesn't have to divide it eight ways before sending it to the group chat.
If it rains, don't worry. We'll play through hail, rain or snow.
Some of the best stories from past tournaments are teams who turned up for a laugh and ended up in the semis. There's real range in the standard, and that's part of what makes it work.
